Apple cookies

Hi Fall&Winter Lovers! Welcome to the first post on my blog! As you may know, baking is one of my favorite things to do throughout the year, but I think that the cold months are the best time to stay in your kitchen and prepare some delicious treats for your family and friends or even just for your own pleasure.

I decided to share this recipe as my first post because I think it’s perfect for this time of the year: it’s still Summer and the temperatures are still quite high outside (sigh!), but we are already craving for some warm cozy food even if the calendar is telling us that Fall is not here yet. These oat apple cookies are delicious and super easy to make.


They are sweet and soft with a lovely cinnamon-y flavor. I like adding some chopped toasted hazelnuts for a nice crunch (you can add any nut of your choice). I love to have them at breakfast with a warm cappuccino or as an afternoon treat with a lovely cup of tea. INGREDIENTS (serving 9 big cookies or 18-20 regular cookies)

1 ½ cups – 229g all-purpose flour

1 ½ cups – 148g rolled oats

1 tsp baking soda

1 tsp baking powder

½ tsp salt

2 tsp ground cinnamon

½ cup – 113g butter at room temperature

1 cup – 145g light packed brown sugar

1 egg at room temperature

1 tsp vanilla extract

2 apples

½ cup – 60g hazelnuts


Start by preheating your oven at 350°F or 175°C.

In a large bowl whisk together all your dry ingredients, mix well until combined and then set aside.

Start peeling your apples and then finely grate them up; in the meantime, you can chop some hazelnuts and give them a little toast in a pan on low heat for about 3 minutes. Then set aside.


With a hand mixer or a stand mixer beat the room temperature butter with the brown sugar until fluffy; add the egg and the vanilla extract and mix well. Add your dry ingredients and grated apples in two steps.




Finally incorporate the toasted hazelnuts with a spatula.


Prepare a non-stick baking tray or a tray lined with parchment paper and start scooping your cookies. I’m using a 1/3 measuring cup (I like my cookies nice and thick), but you can use about a tablespoon of dough for each cookie. In the oven they go for about 12-15 minutes, (depending on how big you scooped them) or until golden brown. I baked mine for 13 minutes plus one more minute with the oven turned off.


They will stay soft and tender in the middle, because of the moist given by the apples and the oats. Leave them to cool down for about 10 to 15 minutes and then you can transfer your cookies on your serving plate.
